Minnesota is known for its cold winter weather, ‘Minnesota Nice’ attitude, and all of our 10,000+ lakes. But did you know that the food scene here is also quite amazing?  From legendary breweries to local food stops there is no shortage of variety. One of those amazing places to stop is a little cupcake shop downtown Hopkins, Minnesota called Amy’s Cupcake Shoppe.  Don’t let the name fool you into thinking that cupcakes are all that they make though. Owner Amy has been in business since 2014 and produces some of the yummiest sugar creations ever! Among the list of things they bake besides their namesake are mini cheesecakes and tarts, pies, adorable sugar cookies, cake pops and parfaits, edible cookie dough, Belgian Liege Waffles, custom cakes, cinnamon rolls, and my favorite, macarons.

When we create catalogs of images for companies to use in their marketing, we like to showcase all that they create, as well as how they create it.  In order to do this for this bakery, we had to roll with their bakery hours. What are those? We arrived on site at 4 am. 4 A.M.!!!!  And they were already there elbows deep in baking! Being a baker is not for the person who likes to sleep in!
